Our Story

Born in 2020.
Still rising.

Dad's Dough is a small-batch artisan organic sourdough micro-bakery based in Brooklyn. Every loaf is naturally leavened with an organic sourdough starter that has been continuously maintained since 2020, slow fermented for flavor and digestibility, and baked fresh just before distribution.

As a dad, home baker, and longtime member of the Hearty Roots Greenwood Heights CSA since 2012, I've always appreciated the connection between good food, local producers, and community. Dad's Dough grew out of years of baking for family, friends, and neighbors, and a belief that great bread is made with simple ingredients, patience, and care.

Using organic ingredients and traditional techniques, each loaf is crafted to develop a crisp crust, flavorful crumb, and the character that only naturally fermented bread can provide.

Pro tip: our loaves freeze beautifully. Order more than one and pop the extras in the freezer. When ready to enjoy, let it defrost at room temperature then warm in a 350°F oven for 10 minutes to revive that fresh-baked crust.

How It's Made

Our Process

The Starter

Born during the pandemic in 2020, our wild sourdough starter is fed and maintained with organic flour — the living heart of every loaf.

Organic Ingredients

Only organic, high quality flour and filtered water. No additives, no preservatives. Mixed and proofed exclusively in glass and stainless steel — never plastic.

Overnight Fermentation

Every loaf slow ferments overnight — a 10 to 12 hour process that develops deep flavor, improved digestibility, and that characteristic tang you can't rush.

Baked Fresh

Loaves are baked fresh the day before each distribution and allowed to rest overnight — a final step that lets the crust set, the crumb firm up, and the flavors fully develop. Like most great things, this bread is worth the wait.

Hi, I'm Noah.

I'm a dad from the neighborhood and a proud Hearty Roots CSA member since 2012. This community has been feeding my family for over a decade and now I get to return the favor.

What started as a pandemic project in 2020, creating a sourdough starter and baking fresh-baked sourdough loaves through lockdown with my kids, has grown into something I'm genuinely passionate about. I bake every loaf myself, by hand, with the same care and attention I'd put into a meal for my own family.

Dad's Dough is my small way of adding something homemade, honest, and genuinely good to our community. I hope you love the bread as much as we love making it.
